Yesterday, I was reading a vegetarian blog to get some food ideas and I had this revelation . . . I haven't cooked curry in years because Prince Charming hates it. But again if I am going to cook two meals I am free to have fun and experiment and start cooking with curry sometimes. So yesterday I went looking for a recipe to fit the idea I had in my head. I couldn't find one that was what I was looking for so I just starting putting things in the pot to see what I came up with. And this is a picture of the stew I created:
I added potatoes, cauliflower, frozen california veg, corn, black beans, fat free sour cream, low fat veg cream soup, garlic powder, onion powder, curry powder,salt and pepper. It was really yummy. I ate it with hummus and low fat cream cheese on tortillas, but I really didn't need to add that. It was just so good. I am having some more for my lunch today at work. So far, this has been two full days at a completely vegetarian way of life and it has been fun.
