I am home from work again today with a sick Princess and as guilty as I feel over that I am thrilled to get a break from work.

I am making a nice pot of vegetarian soup today. I made a small pot of low fat cream of roast vegetable soup yesterday that was out of this world!

I also tried a roast vegetable sandwich which I love love love!

When I first started this diet. I didn't expect to have so much good food. I really kind of expected to get used to eating side dishes ignoring the fact that I was missing the main course. But I really don't feel like that at all. I am eat well. i am never hungry. I am loving my veggies and my belly is so much more healthy. I don't even crave meat. last night I had a bad craving and it was for almonds. I haven't had almonds in a long time and last night I wanted them soo bad.

On the journey to a healthier me, I am considering switching to decaf coffee. I have a big container of it there so I have a little ways to go, but that is a change I am thinking of making.
